Crustless Quiche : Atkins Recipes

Ingredients for Crustless Quiche

4 eggs — beaten
1 1/2 cups heavy cream
5 green onion — snipped with scissors
1/4 cup leeks — thinly sliced
1/2 cup broccoli — steamed or leftovers
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup cooked chicken — ham or crabmeat
1 1/2 cups Swiss cheese — Cheddar, or Monterey

Preparation Method for Crustless Quiche

Preheat oven to 350°F

1) Beat eggs, add cream, mix. Add all other ingredients and mix well.  Pour egg mixture into a greased 9" or 10 " pie plate.

2) Place pie plate into a large baking dish and pour HOT water into the dish around the pie plate to a depth of 1 inch. 

3) Bake quiche in the oven for 40min. or until a knife inserted near center comes out clean. Remove from oven. Let stand for ten min. 

Makes 4 generous servings
